Fairy Food, also known as honeycomb candy or sponge candy, is a delightful confection with an incredibly airy, brittle texture that melts in your mouth. This recipe features a sweet, slightly tangy crunch enrobed in smooth chocolate, making it a truly magical treat.

Ingredients:

Dark corn syrup 1 cup
Granulated sugar 1 cup
White vinegar 1 tablespoon
Baking soda 1 tablespoon
Chocolate candy coating 10-15 oz

Instructions:

  1. Prepare Pan: Line a large sheet pan (a jelly roll pan or half-sheet pan works well) with parchment paper, then set it aside.
  2. Cook Syrup Mixture: Add the dark corn syrup, granulated sugar, and white vinegar to a medium-sized saucepan. Stir to combine the ingredients. Place the pan over medium-high heat. Do not stir the mixture once it starts to heat up. Bring the temperature of the mixture to 300°F (149°C). It’s crucial to use a candy thermometer for accuracy.
  3. Add Baking Soda: Once the mixture reaches 300°F, immediately remove the pan from the heat. Quickly and vigorously mix in the baking soda. The mixture will rapidly expand and foam up significantly.
  4. Pour and Cool: Immediately transfer the foamy mixture to the prepared baking sheet. Allow the mixture to pool out naturally; do not worry about spreading it or trying to make it even. Let the candy cool completely at room temperature for at least 1-2 hours, or until it is firm and brittle.
  5. Break and Dip in Chocolate: Once fully cooled and set, gently break the candy into small, irregular pieces. Place the chocolate candy coating in a small microwave-safe bowl. Microwave in 30-second increments, stirring well after each interval, until the chocolate is fully melted and smooth. Dip each piece of the cooled “Fairy Food” into the melted chocolate, coating it as desired. Place the chocolate-dipped pieces back onto the parchment paper-lined sheet to set.
  6. Store: Once the chocolate is fully set (you can speed this up by placing it in the refrigerator for a few minutes), store the Fairy Food in an airtight container at room temperature.
