Ingredients:

Ingredient Quantity
Top Sirloin, thinly sliced 1 ½ lbs
Bell Peppers, seeded and thinly sliced 3
Yellow Onion, thinly sliced 1
Canola Oil 3 tablespoons
Salt 1 teaspoon
Black Pepper 1/4 teaspoon
Garlic Powder 1 teaspoon
Ground Cumin 1 teaspoon
Chili Powder 1 teaspoon
Cayenne Pepper 1/4 teaspoon
Lime Juice Juice of 1 lime
Flour or Corn Tortillas (8″ inch) 6-8
Fajita Toppings (optional) As desired

Instructions:

  1. Preheat: Preheat your oven to 400˚F (200˚C).
  2. Combine Ingredients: In a large bowl, combine the thinly sliced top sirloin, bell peppers, onions, canola oil, salt, black pepper, garlic powder, ground cumin, chili powder, cayenne pepper, and lime juice. Toss thoroughly with tongs to ensure all the meat and vegetables are well coated with the seasoning.
  3. Assemble Foil Packs: Cut 8 pieces of aluminum foil, each approximately 12 inches square. Place a portion of the seasoned beef and vegetable mixture in the center of each foil piece.
  4. Seal Foil Packs: Fold the top sides of the foil together and fold them over several times until the packet is tightly sealed, creating a pouch. Repeat for all remaining beef mixture.
  5. Bake or Grill:
    • Oven: Place the foil packets on baking sheets and bake in the preheated oven for 15-20 minutes, or until the beef is cooked to an internal temperature of at least 155˚F (68˚C).
    • Grill: Alternatively, grill the foil packets on high heat for 7-10 minutes.
  6. Rest: Remove the foil packets from the oven or grill and allow them to rest for 5 minutes before opening.
  7. Serve: Carefully open the foil packets using tongs or two forks. Serve the fajita filling with warm tortillas, lime wedges, and your favorite toppings, such as salsa, guacamole, and cilantro. Each foil packet should yield approximately 2 fajitas.
