Instructions:
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Chicken: Slice the chicken breasts horizontally to create four thin chicken breasts. Arrange them in a baking dish. Season with kosher salt, freshly ground black pepper, and half of the minced garlic. Set aside.
- Prepare Cream Cheese Sauce: In a medium bowl, beat the softened cream cheese and heavy cream until smooth. Add the remaining minced garlic, onion powder, paprika, Italian seasoning, kosher salt, and freshly ground black pepper. Beat to combine. Then, add the parmesan cheese and half of the mozzarella cheese, and beat once more.
- Assemble Casserole: Spread or pour the cream cheese mixture over and around the chicken breasts. Drizzle about a tablespoon of the reserved sun-dried tomato oil over the top. Scatter the chopped sun-dried tomatoes around the dish.
- Bake Covered: Cover the baking dish loosely with aluminum foil and bake until the chicken is cooked through (reaches an internal temperature of 165°F or 74°C), about 20 minutes.
- Add Spinach and Remaining Cheese: Uncover the chicken and stir the roughly chopped spinach into the sauce. Top with the remaining grated mozzarella cheese.
- Bake Uncovered: Return the baking dish to the oven, uncovered, and cook until the cheese is melted and bubbly and the spinach has wilted, about 10 minutes.
