These chewy and sweet coconut bars are a delightful treat, featuring a rich brown sugar base with plenty of shredded coconut.

Ingredients:

Butter 1/2 cup
Brown Sugar 2 cups
Eggs 2
Vanilla Extract 2 teaspoons
All-Purpose Flour 1 1/2 cups
Baking Powder 1 teaspoon
Salt 1 teaspoon
Shredded Sweetened Coconut 1 1/2 cups

Instructions:

  1. Prepare the Oven and Baking Dish:
    • Preheat oven to 350 degrees F (175°C).
    • Grease an 8×8 inch baking dish.
  2. Brown the Butter:
    • Add butter to a large saucepan over medium-high heat.
    • Once butter begins to boil, continuously swirl pan to prevent burning.
    • Continue until butter darkens to an amber color, then remove from heat.
  3. Combine Wet Ingredients:
    • Add the brown sugar to the warm butter and stir until fully integrated.
    • Mix in the eggs and vanilla.
  4. Combine Dry Ingredients:
    • Add the flour, baking powder, and salt to the wet ingredients.
    • Stir until combined.
  5. Add Coconut:
    • Fold coconut into the batter.
    • Transfer to the prepared baking dish.
  6. Bake:
    • Bake for 40-45 minutes.
    • Cover with foil for the last 10 minutes.
  7. Cool and Serve:
    • Let bars fully cool before slicing.
