These easy-to-make bars are packed with rich butterscotch flavor and have a delightful crispy edge, perfect for a sweet treat.
Crispy Butterscotch Bars

- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large mixing bowl, pour in the melted unsalted butter and add the packed brown sugar. Stir them together until the mixture is smooth and well combined.
- Add the 2 large eggs and 2 teaspoons of vanilla extract to the butter-sugar mixture. Mix until everything is thoroughly incorporated.
- In a separate medium bowl, whisk together the 2 cups of all-purpose flour, 2 teaspoons of baking powder, and ½ teaspoon of salt until they are evenly combined.
- Gradually add the dry ingredients (flour mixture) to the wet ingredients (butter-sugar-egg mixture), stirring until just combined. Be careful not to overmix the batter.
- Fold in the 1 cup of butterscotch chips into the batter, distributing them evenly throughout.
- Pour and spread the batter evenly into the prepared 9×13 inch baking pan.
- Bake in the preheated oven for 25-30 minutes, or until the top of the bars is golden brown and a toothpick inserted into the center comes out clean.
- Once baked, remove the pan from the oven and allow the butterscotch bars to cool completely in the pan before cutting them into squares. Enjoy!
