Stuffed potatoes: a delicious and hearty dish

INGREDIENTS :

6 large potatoes;
⅔ cup (55 g) cheese, cut into squire;
⅔ cup (65 g) ham, cut into squares;
6 eggs ;
Salt and pepper.

METHOD :

Preheat the oven to 190C/375F.
Prick the potatoes all over with a fork. Brush with oil and bake for 1.5 to 2 hours or until cooked through. Let cool completely.
Cut off the top part of each potato, carefully scoop out the inside, leaving some potato on the sides.
Add an egg, ham, salt and pepper, cheese and mashed potatoes inside each potato “boat”.
Bake the stuffed potatoes for 20 minutes, then serve immediately.
