Slow Cooker Honey Garlic Chicken

Onions, chopped 1 cup
Green beans, trimmed 1 pound
Fresh parsley, chopped (optional) For serving
Salt and pepper To taste
Cornstarch (Optional) 2 tsp
Water (Optional) 3 tsp

Instructions:

  1. Prepare Honey Garlic Sauce:
    • In a small bowl, whisk together honey, minced garlic, low-sodium soy sauce, ketchup, and dried oregano.
  2. Assemble Chicken and Vegetables:
    • Place chicken thighs, baby red potatoes, peeled carrots, and chopped onions in a 4-6 quart slow cooker.
  3. Pour Honey Garlic Sauce:
    • Evenly pour the prepared honey garlic sauce over the chicken and vegetables in the slow cooker.
  4. Cooking Time:
    • Cover the slow cooker and seal the lid.
    • Cook on a LOW setting for 6-8 hours or on HIGH for 3-3 1/2 hours (see note).
  5. Add Green Beans and Optional Cornstarch Slurry:
    • About 20 minutes before serving, add trimmed green beans to the slow cooker.
    • Optionally, mix 2 tsp of cornstarch with 3 tsp of water to create a slurry. Add to the sauce for thickness.
  6. Continue Cooking:
    • Re-seal the lid and cook for an additional 15-20 minutes until green beans are tender, and the sauce is starting to thicken.
  7. Serve:
    • Using a slotted spoon, transfer the chicken and vegetables to serving plates.
    • Optionally, broil the chicken thighs for 2-3 minutes to brown the skin.
  8. Drizzle Sauce and Garnish:
