Buttermilk 1/4 cup
Pecans, roughly chopped 2 cups

Brown Sugar 3/4 cup
Water 2 tablespoons
Pecan Extract or Vanilla Extract 1 tablespoon
Powdered Sugar 1/2 – 2 cups (or more)

Instructions:

  1. Preheat and Prepare Pans: Preheat oven to 350ºF (175ºC). Lightly grease 1-2 9×5-inch loaf pans with butter or non-stick spray.
  2. Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugars: In a large bowl or stand mixer, cream together the softened butter, sugar, and brown sugar for 3-5 minutes, or until light and fluffy.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract.
  5. Alternate Dry and Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  6. Fold in Pecans: Fold the chopped pecans into the batter until evenly distributed.
  7. Bake: Pour the batter into the prepared loaf pans. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Prepare Glaze: While the cake bakes, combine the butter, brown sugar, and water in a small saucepan over medium heat. Whisk until the butter is melted and the sugar is dissolved.
  9. Add Extract and Powdered Sugar: Remove the glaze from the heat and stir in the pecan extract or vanilla extract. Gradually whisk in the powdered sugar until the desired consistency is reached.
  10. Glaze the Cake: Pour the glaze evenly over the warm cake(s). Allow the glaze to set before slicing and serving.
