Instructions:
- Preheat and Prepare Pans: Preheat oven to 350ºF (175ºC). Lightly grease 1-2 9×5-inch loaf pans with butter or non-stick spray.
- Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
- Cream Butter and Sugars: In a large bowl or stand mixer, cream together the softened butter, sugar, and brown sugar for 3-5 minutes, or until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract.
- Alternate Dry and Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
- Fold in Pecans: Fold the chopped pecans into the batter until evenly distributed.
- Bake: Pour the batter into the prepared loaf pans. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare Glaze: While the cake bakes, combine the butter, brown sugar, and water in a small saucepan over medium heat. Whisk until the butter is melted and the sugar is dissolved.
- Add Extract and Powdered Sugar: Remove the glaze from the heat and stir in the pecan extract or vanilla extract. Gradually whisk in the powdered sugar until the desired consistency is reached.
- Glaze the Cake: Pour the glaze evenly over the warm cake(s). Allow the glaze to set before slicing and serving.
