This refreshing Pineapple Dream Dessert is a layered delight, combining a buttery graham cracker crust with a creamy, pineapple-infused filling. It’s a no-fuss dessert that’s perfect for potlucks, picnics, or any occasion that calls for a sweet treat.

Ingredients:

Crust Ingredients

Unsalted butter ½ cup
Graham cracker crumbs 2 ½ cups (approx. 2 sleeves)

Luscious Layers Ingredients

Unsalted butter (softened) ½ cup
Powdered sugar (sifted) 2 cups
Cream cheese (softened) 4 oz
Cool Whip (fat-free) 8 oz
Crushed pineapple (well-drained) 20 oz

Instructions:

  1. Preheat Oven: Preheat your oven to 300°F (150°C).
  2. Prepare the Crust:
    • Melt the ½ cup of unsalted butter and allow it to cool slightly.
    • In a bowl, combine the graham cracker crumbs with the melted butter. Mix until evenly combined.
    • Press 2 cups of the graham cracker mixture into a 9×9 inch square pan.
    • Bake the crust for 8 to 10 minutes.
    • Allow the crust to cool completely on a wire rack.
  3. Prepare the Creamy Layer:
    • In a mixer, beat the softened ½ cup of unsalted butter and the softened cream cheese until smooth and creamy.
    • Reduce the mixer speed to low and gradually add the sifted powdered sugar.
    • Once the sugar is incorporated, increase the speed and beat for about 1 minute.
    • Stir in a heaping tablespoon of the well-drained crushed pineapple into the cream cheese mixture.
    • Evenly spread this creamy layer over the cooled graham cracker crust.
  4. Assemble and Refrigerate:
    • Gently fold the remaining crushed pineapple into the Cool Whip.
    • Spread this pineapple Cool Whip mixture evenly over the cream cheese layer.
    • If you have left over graham cracker crumbs, sprinkle them over the top layer.
    • Refrigerate the dessert for at least 4 hours, or preferably overnight, to allow the layers to set.  
  5. Serve: Cut into squares and enjoy your Pineapple Dream Dessert.
