Instructions

Step 1: Preheat & Prep

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish with cooking spray or butter.

Step 2: Cook the Beef Mixture

  • In a skillet over medium heat, cook ground beef and onion until browned and softened (5-7 minutes). Drain excess fat.
  • Add minced garlic, cooking for 1-2 minutes until fragrant.
  • Stir in taco seasoning, black beans, corn, diced tomatoes, and salsa.
  • Let the mixture simmer for 5 minutes, allowing the flavors to meld.

Step 3: Assemble the Lasagna

  • Place 2 tortillas at the bottom of the baking dish, overlapping as needed.
  • Add a layer of beef mixture, followed by 1 cup of shredded cheese.
  • Repeat two more times: tortillas, beef mixture, cheese.
  • Finish with a final layer of tortillas, topped with remaining cheese.

Step 4: Bake

  • Cover the dish with foil and bake for 25 minutes.
  • Remove foil and bake for an additional 10-15 minutes, until cheese is bubbly and golden.
