Lemon Blossoms

Ingredients:

1 Yellow cake mix 1 package
2 Instant lemon pudding 1, 3.5 oz package
3 Eggs 4
4 Vegetable or canola oil ¾ cup

Glaze

1 Powdered sugar 4 cups
2 Fresh lemon juice ⅓ cup
3 Grated lemon zest 1 lemon
4 Vegetable or canola oil 3 Tbs
5 Water 3 Tbs

Instructions:

Follow these simple steps to create the magic:

  1. Preheat your oven to 350° and coat a miniature muffin pan with non-stick cooking spray.
  2. In a large bowl, combine the cake mix, lemon pudding, eggs, and oil. Blend with an electric mixer for two minutes.
  3. Spoon 1 Tbs of the mixture into each muffin cup and bake for 12 minutes.
  4. Turn blossoms onto a towel when removing the pan from the oven.
  5. For the glaze, sift powdered sugar into a medium bowl. Add lemon juice, zest, oil, and water. Mix until smooth.
  6. Dip warm blossoms into the glaze, coating as much as possible.
  7. Place blossoms on wire racks with waxed paper underneath to catch drips. Allow the glaze to set thoroughly before serving or storing in an airtight container. You can also add small pieces of candied fruit right after glazing.
