Impossible Taco Pie

This easy and delicious recipe combines the flavors of tacos with the simplicity of a quiche or pie. It’s a great weeknight meal that’s sure to please the whole family.
Ingredients:

Taco seasoning packet | 1 packet |
Diced green chiles | 4.5 oz can |
Salsa | 1/2 cup |
Cheddar cheese, grated | 1 cup |
Bisquick mix | 1/2 cup |
Milk | 1 cup |
Large eggs | 3 |
Kosher salt and black pepper | To taste |
Cilantro, finely chopped | For garnish |
Instructions:
- Preheat oven to 400°F (200°C). Grease a 9-inch pie plate with nonstick cooking spray.
- Place a skillet over medium heat and brown the ground beef until no longer pink. Drain off any excess fat.
- Season the ground beef with the taco seasoning packet.
- Add the diced green chiles and salsa to the ground beef. Stir to combine.
- Transfer the ground beef mixture to the prepared pie plate and spread it out evenly.
- Sprinkle the grated cheddar cheese evenly over the top of the ground beef mixture.
- In a medium bowl, whisk together the Bisquick mix, milk, and eggs until smooth.
- Pour the Bisquick mixture evenly over the beef and cheese in the pie plate.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the center is set.
- Remove from oven and let sit for a few minutes before slicing.
- Garnish with finely chopped cilantro and any other desired taco toppings (such as sour cream, guacamole, or diced tomatoes).
