Impossible Taco Pie

This easy and delicious recipe combines the flavors of tacos with the simplicity of a quiche or pie. It’s a great weeknight meal that’s sure to please the whole family.

Ingredients:

Lean ground beef 1 1/2 lbs
Taco seasoning packet 1 packet
Diced green chiles 4.5 oz can
Salsa 1/2 cup
Cheddar cheese, grated 1 cup
Bisquick mix 1/2 cup
Milk 1 cup
Large eggs 3
Kosher salt and black pepper To taste
Cilantro, finely chopped For garnish

Instructions:

  1. Preheat oven to 400°F (200°C). Grease a 9-inch pie plate with nonstick cooking spray.
  2. Place a skillet over medium heat and brown the ground beef until no longer pink. Drain off any excess fat.
  3. Season the ground beef with the taco seasoning packet.
  4. Add the diced green chiles and salsa to the ground beef. Stir to combine.
  5. Transfer the ground beef mixture to the prepared pie plate and spread it out evenly.
  6. Sprinkle the grated cheddar cheese evenly over the top of the ground beef mixture.
  7. In a medium bowl, whisk together the Bisquick mix, milk, and eggs until smooth.
  8. Pour the Bisquick mixture evenly over the beef and cheese in the pie plate.
  9. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the center is set.
  10. Remove from oven and let sit for a few minutes before slicing.
  11. Garnish with finely chopped cilantro and any other desired taco toppings (such as sour cream, guacamole, or diced tomatoes).
  12. Serve and enjoy!
