These sweet, spicy, and tangy Candied Jalapeños, also known as Cowboy Candy, are a delicious condiment perfect for adding a kick to various dishes.

Ingredients:

Jalapeño peppers, sliced 1/4-inch thick 1/2 lb
Granulated sugar 1 cup
Apple cider vinegar 1/2 cup
Salt 1 teaspoon
Celery seeds 1/2 teaspoon

Instructions:

  1. In a saucepan or a high-sided pan, combine the granulated sugar, apple cider vinegar, salt, and celery seeds.
  2. Bring the mixture to a boil over medium-high heat, stirring occasionally to ensure the sugar dissolves.
  3. Once boiling, reduce the heat to low and let the syrup simmer gently for 5 minutes without stirring.
  4. Add the sliced jalapeño peppers to the simmering syrup. Return the mixture to a gentle simmer.
  5. Cook the jalapeños in the simmering syrup for an additional 4 minutes, stirring occasionally. The jalapeños will soften slightly and become translucent.
  6. Carefully transfer the candied jalapeño slices to clean jars.
  7. Pour any remaining syrup from the saucepan over the jalapeños in the jars, ensuring the peppers are mostly submerged.
  8. Allow the jars to cool to room temperature.
  9. Store the Cowboy Candy in the refrigerator. They will keep well for up to 3 months. Enjoy!
