Instructions:
- In a saucepan or a high-sided pan, combine the granulated sugar, apple cider vinegar, salt, and celery seeds.
- Bring the mixture to a boil over medium-high heat, stirring occasionally to ensure the sugar dissolves.
- Once boiling, reduce the heat to low and let the syrup simmer gently for 5 minutes without stirring.
- Add the sliced jalapeño peppers to the simmering syrup. Return the mixture to a gentle simmer.
- Cook the jalapeños in the simmering syrup for an additional 4 minutes, stirring occasionally. The jalapeños will soften slightly and become translucent.
- Carefully transfer the candied jalapeño slices to clean jars.
- Pour any remaining syrup from the saucepan over the jalapeños in the jars, ensuring the peppers are mostly submerged.
- Allow the jars to cool to room temperature.
