Instructions:
- Preheat oven and prepare baking sheet: Preheat your oven to 350°F (175°C). Line a rimmed baking sheet with aluminum foil and lightly grease the foil with butter.
- Arrange graham crackers: Line the prepared baking sheet with graham crackers in a single layer, breaking them where necessary to fit snugly and cover the bottom of the pan.
- Make the caramel mixture: In a medium saucepan over medium heat, combine the unsalted butter, brown sugar, chopped pecan halves, and salt. Bring the mixture to a boil and let it cook for 2 minutes, stirring constantly to prevent burning and ensure the sugar dissolves.
- Add vanilla: Remove the saucepan from the heat and stir in the vanilla extract.
- Pour over crackers: Immediately pour the hot pecan-caramel mixture evenly over the layer of graham crackers. Use a spatula to spread the mixture to the edges of the pan, ensuring the graham crackers are mostly covered and the pecans are distributed as evenly as possible.
- Bake: Bake in the preheated oven until the caramel is bubbly all over, about 10 minutes. Watch carefully to prevent burning.
- Cool and break: Remove the baking sheet from the oven and allow the pecan pie bark to cool completely at room temperature. Once fully cooled and hardened, break the bark into irregular pieces. Enjoy this sweet and crunchy treat!
