These savory stuffed crescents are a delightful appetizer or snack, combining the tangy flavors of feta and mozzarella with fresh spinach and olives, all wrapped in flaky crescent roll dough.

Feta Cheese Crumbles 4 oz
Shredded Mozzarella Cheese 4 oz
Fresh or Frozen Spinach 3 oz
Diced Black Olives 2 oz
Egg White 1 (beaten)
Red Pepper Flakes 1/4 tsp

Instructions:

  1. Prepare the Filling:
    • If using fresh spinach, chop it. If using frozen spinach, thaw and squeeze out excess moisture.
    • In a large mixing bowl, combine the chopped spinach, diced black olives, feta cheese crumbles, shredded mozzarella cheese, and red pepper flakes.
    • Toss the ingredients thoroughly to ensure even distribution.
    • Set the bowl aside.
  2. Prepare the Crescent Rolls:
    • Preheat your oven to the temperature indicated on the crescent roll package.
    • Lightly grease a cookie sheet.
    • Unroll the crescent roll dough and separate it into individual triangles.
  3. Stuff and Roll:
    • Using a spoon, place small mounds of the spinach mixture onto the wide end of each dough triangle.
    • Roll the dough from the wide end towards the pointed end, creating crescent shapes.
  4. Egg Wash and Bake:
    • Place the stuffed crescents onto the prepared cookie sheet.
    • Lightly brush each crescent with the beaten egg white.
    • Bake for approximately 15 minutes, or until the crescents are golden brown.
  5. Cool and Serve:
    • Remove the baked crescents from the oven and allow them to cool slightly before serving.
    • Serve warm.
