Ingredients:

Finely Chopped Onion 2 cups
Minced Garlic 6 cloves
Butter (Half a Stick) 1/2 cup

Vegetable Broth 1 1/2 cups
Heavy Cream 1 1/2 cups
Salt 1 tablespoon
Pepper 2 teaspoons
Slap Spice, Mama 2 teaspoons
Sour Cream 8 ounces
Shredded Pepper Jack Cheese 1 cup
Freshly Grated Parmesan Cheese 1 cup

Instructions:

Step 1: Preheat the Oven

  1. Set your oven to 400°C.
  2. Spray a 14 x 11 x 2 x baking dish with non-stick spray and set it aside.

Step 2: Prepare the Potatoes

  1. Peel 5 pounds of russet potatoes and cut them into thin slices, approximately 1/8″ thick.
  2. Place the sliced potatoes in a bowl until ready to use.

Step 3: Saute Onions and Garlic

  1. In a large skillet, melt half a cup of butter over low heat.
  2. Add 2 cups of finely chopped onion and 6 cloves of minced garlic.
  3. Fry the mixture for 4-5 minutes until fragrant.

Step 4: Create the Sauce

  1. Sprinkle 1/4 cup of flour over the onion and garlic mixture, stirring and cooking for a few minutes.
  2. Gently pour 1 1/2 cups of vegetable broth into the skillet.
  3. Stir in 1 tablespoon of salt, 2 teaspoons of pepper, 2 teaspoons of Slap Spice, Mama, and 1 1/2 cups of heavy cream.
  4. Stir until the mixture is firm, then remove from heat just before boiling.
  5. Add 1 cup of shredded Pepper Jack cheese and mix until melted.

Step 5: Layering

  1. Place a third of the potato slices in the prepared baking dish.
  2. Add a third of the sour cream and a third of the cheese sauce on top of the potatoes.
  3. Sprinkle one-third of the Parmesan cheese, one-third of the Pepper Jack cheese, and one-third of the cheddar cheese.
  4. Repeat these layers two more times, finishing with a layer of cheddar cheese on top.

Step 6: Bake

  1. Cover the baking dish with foil and place it in the preheated oven.
  2. Bake for 1 1/2 – 2 hours.
  3. About 15 to 20 minutes before the potatoes are tender, remove the foil to brown the cheese slightly.
