Forgotten Chicken Recipe

This “Forgotten Chicken” casserole is a true weeknight hero! With minimal prep and just a few pantry staples, you can set it in the oven and practically forget about it until a deliciously tender, creamy, and flavorful chicken and rice dinner is ready.

Forgotten Chicken Recipe

Ingredients:

Ingredient Quantity
Minute rice 2 cups
Cream of chicken soup 1 can
Cream of celery soup 1 can
Water 1 can (use soup can)
Boneless skinless chicken breasts 5 (about 1 1/2 lbs)
Onion soup mix 1 envelope
Butter For greasing dish

Instructions:

  1. Preheat Oven & Prep Dish: Preheat your oven to 350°F (175°C). Generously grease a 9×13-inch baking dish with butter and set it aside.
  2. Combine Rice Mixture: In a medium bowl, stir together the cream of chicken soup, cream of celery soup, and 1 can’s worth of water (use one of the empty soup cans to measure). Add the minute rice and stir until everything is well combined.
  3. Assemble Casserole: Transfer this rice mixture evenly into the prepared baking dish. Arrange the boneless skinless chicken breasts on top of the rice mixture in a single layer. Sprinkle the onion soup mix evenly over the chicken breasts.
  4. Bake: Cover the dish tightly with aluminum foil. Bake for approximately 90 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and all the liquid has been absorbed into the rice.
