Let’s dive into the details of this mouthwatering chicken and dumpling casserole recipe.

Ingredients:

INGREDIENT QUANTITY
Pulled chicken from rotisserie chicken 1 whole chicken, skin removed
Butter 1 stick (melted)
Milk 1 cup
Self-rising flour 1 cup (must be self-rising)
Chicken broth 2 cups
Condensed cream of chicken soup 1 can
Salt To taste
Pepper To taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Start by spreading the pulled chicken from a rotisserie chicken evenly in a 9×13 baking dish.
  3. Pour the melted butter evenly over the chicken.
  4. Season the chicken with a little salt and pepper according to your taste preferences.
  5. In a medium bowl, whisk together 1 cup of self-rising flour and 1 cup of milk until you have a smooth mixture. Make sure to use self-rising flour; this is crucial for fluffy dumplings. Slowly pour this mixture evenly over the chicken in the baking dish. Do not stir!
  6. In the same bowl, whisk together 2 cups of chicken broth and the condensed cream of chicken soup. Again, slowly pour this mixture into the baking pan over the chicken. Do not stir. As it bakes, the dumplings will form.
  7. Bake the casserole uncovered in the preheated oven for 45 minutes. The top will become golden brown, and the dumplings will cook and rise beautifully.
  8. After baking, let the casserole sit for a minimum of 5 minutes before serving. This resting time allows the dumplings to finish forming and becoming fluffy.
  9. The longer the casserole sits, the more dumplings you’ll get, and it’s just as good the second day if you have leftovers. Enjoy your delicious chicken and dumpling casserole!
