Cajun Corn On The Cob

 Lime juice 1 tablespoon
1 teaspoon chipotle or chili powder (optional)

Instructions:

Step 1: Oil and Spices

Whisk together olive oil, half of the Cajun spice, half of the paprika spice, garlic and onion powder, salt, and pepper to taste. Set aside some of this mixture for later brushing.

Step 2: Preparing the Corn

Place each husked corn on a piece of foil and generously brush with the oil-spice mixture. Wrap each corn in foil.

Step 3: Baking

Transfer the corn to the oven and bake for 30 minutes at 425°F. For a softer texture, brush with more oil-spice mixture after 30 minutes and bake an additional 20-25 minutes.

Step 4: Mayo Sauce

While the corn bakes, mix mayo, sour cream, leftover Cajun and paprika, lime juice, salt, and pepper in a bowl.
