Old-Fashioned Boston Brown Bread is a classic New England treat known for its moist, dense texture and sweet, slightly tangy flavor. Traditionally steamed in cans, this recipe offers the option of baking in cans or a loaf pan. It’s a delightful bread, perfect for breakfast, a snack, or alongside a hearty meal.

Ingredients:

Ingredient Quantity
Wheat flour 2 1/2 cups
Buttermilk 2 cups
All-purpose flour 1/2 cup
Raisins 1 cup
Sugar 1/2 cup
Molasses 1/2 cup
Baking soda 2 1/2 teaspoons
Egg 1
Baking powder 1 teaspoon
Salt 1 teaspoon
Water, boiling 1 cup
Butter (garnish) as desired

Instructions:

  1. Preheat and Prepare: Preheat oven to 350ºF (175°C). Generously spray 4-5 (15 oz.) cans with non-stick spray, or grease a 9×5-inch loaf pan.  
  2. Soak Raisins: Place raisins in a medium bowl and cover with boiling water. Let sit for 10 minutes, or until plump.
  3. Combine Dry Ingredients: In a large bowl, combine wheat flour, all-purpose flour, sugar, baking powder, and salt. Beat in the egg.
  4. Combine Wet Ingredients: In a separate bowl, whisk baking soda into buttermilk, then stir in molasses.
  5. Combine Wet and Dry: Fold the wet ingredients into the dry ingredients, mixing until just incorporated.
  6. Add Raisins: Fold the plumped raisins into the batter.
  7. Fill Cans or Pan: Pour batter into greased cans, filling them only halfway. If using a loaf pan, pour all batter into pan. Tap cans or pan on counter to remove air bubbles.
  8. Prepare for Baking: Place cans on a baking sheet. (Optional: place a second baking sheet on top of the cans to prevent over-rising.)
  9. Bake: Place baking sheet(s) in the oven and bake for 50 minutes.
  10. Finish Baking: Remove the top baking sheet (if used) and bake for another 10 minutes, or until a toothpick inserted in the center comes out clean.
  11. Cool: Remove from oven and use a knife to loosen the edges of the bread from the cans or pan. Gently remove the loaves and let cool on a wire rack.
  12. Serve: Serve with butter or cream cheese. Enjoy!
